Crafted only in exceptional vintages, this 2015 release captures the richness and intensity of a warm, sunny year while preserving the house’s signature precision and elegance. Combining Chardonnay and Pinot Noir in perfect harmony, it’s a Champagne that speaks both of its terroir and of meticulous winemaking craft.
Tasting Notes
In the glass, Dom Pérignon 2015 shimmers with a pale golden hue, threaded with an exceptionally fine and persistent mousse. On the nose, it opens with ripe stone fruits—white peach and apricot—layered over citrus zest, green mango, and delicate floral notes, supported by hints of brioche, almond, and chalky minerality. The palate is broad and energetic, with a generous, almost creamy texture balanced by a precise, saline acidity. Flavors of ripe pear, yellow plum, and citrus intertwine with nuances of toasted hazelnut, pastry, and subtle spice, leading to a long, sculpted finish that is both vibrant and deeply satisfying. Still at the beginning of its evolution, the 2015 vintage already drinks beautifully but will continue to develop greater complexity and nuance over the next 10–20 years, and potentially longer under ideal cellaring conditions.
Production
Dom Pérignon 2015 is sourced from a selection of grand cru and premier cru vineyards across Champagne, primarily in the Côte des Blancs and Montagne de Reims, where chalk-rich soils lend the wine its trademark tension and minerality. The grapes—Chardonnay and Pinot Noir—are harvested by hand at optimal ripeness to preserve freshness and aromatic intensity. In the cellar, each parcel is vinified separately in stainless steel to retain purity before meticulous blending. After bottling, the wine undergoes its second fermentation and is aged sur lie for several years in the cool, dark cellars of Épernay, allowing the mousse to refine and the complex autolytic notes of brioche, cream, and toast to slowly develop prior to disgorgement and final dosage.
Food & Serving
Dom Pérignon 2015 is an exceptional partner for refined cuisine: think caviar, oysters, and shellfish, delicate sashimi and crudo, butter-poached lobster, or classic French dishes such as turbot in a beurre blanc or roasted chicken with morels. It also pairs beautifully with aged hard cheeses and subtly truffled dishes that echo its earthy-mineral core. Serve well chilled but not icy, ideally at 8–10°C (46–50°F), to allow the aromatic layers to unfold. Decanting is not essential, but gently pouring into a larger-bowled white wine glass or allowing the bottle a few minutes in the glass can help the wine open up and reveal its full spectrum of aromas and textures.
