This combination of mineral-rich ground and moderate climate helps preserve bright acidity and aromatic definition. The fruit is picked with great care at the precise moment when sugar and acid are in optimal balance, typically with early morning harvesting to keep temperatures low. In the cellar, a gentle pressing or short maceration on the skins extracts the delicate pink color and fine aromatics, followed by a cool, temperature-controlled fermentation in stainless steel to safeguard freshness and purity. The wine is then rested on fine lees for a brief period to add texture without sacrificing its crisp, vibrant profile.
