These well-drained, poor soils naturally limit yields and concentrate flavor, while cooler night-time temperatures at elevation help preserve acidity and aromatic lift. Grapes are typically harvested by hand to ensure careful selection of only healthy, optimally ripe bunches. After a gentle pressing, the must undergoes fermentation and then matures under a protective layer of flor yeast—known as crianza biológica—allowing for slow, controlled evolution with minimal oxidation.
