Tasting Notes
In the glass, the 2011 Sacer shows a deep ruby core moving toward garnet at the rim, signaling both concentration and over a decade of bottle age. The nose is layered and expressive, with ripe blackberries, black plum and morello cherry intertwined with dried violets, licorice, sweet spice, cocoa, leather and a touch of tobacco and underbrush. On the palate, this is full-bodied and firmly structured, with the hallmark Sagrantino tannins now beginning to integrate into a more polished, velvety frame. Dark fruits are joined by notes of espresso, dark chocolate, cloves and a subtle balsamic edge, lifted by fresh acidity that keeps the wine vibrant despite its richness. The finish is long and persistent, with lingering spice and savory, almost truffley nuances. With proper cellaring, the 2011 vintage still has excellent aging potential, easily offering another 8–10 years of development, during which tertiary notes of leather, dried herbs and forest floor will continue to deepen.
Production
The grapes for Colpetrone Sagrantino di Montefalco Sacer are sourced from selected hillside vineyards around Montefalco in Umbria, where clay- and limestone-rich soils, good drainage and significant day–night temperature swings help Sagrantino ripen fully while preserving aromatic lift. Yields are kept low, and harvesting is typically done by hand to ensure only perfectly ripe, healthy clusters make it into the winery. After careful sorting, the grapes undergo a long maceration to extract color, tannin and flavor, followed by fermentation in temperature-controlled tanks. The wine is then aged for an extended period in oak (often a mix of barriques and larger casks) to refine the powerful tannic structure and add complexity, before further bottle aging prior to release under the Sacer label.
Food & Serving
This is a wine made for hearty, flavorful dishes. Think slow-braised lamb shanks, wild boar ragù, venison, grilled or roasted red meats, ossobuco, and deeply savory stews. It also pairs beautifully with aged hard cheeses such as pecorino, Parmigiano Reggiano and mature cow’s milk cheeses, as well as Umbrian specialties featuring black truffle. Serve at 16–18°C (60–64°F) in large-bowled glasses to allow the aromas to unfold fully. Decanting for 1.5–2 hours is strongly recommended, especially while the wine is still on the younger side of its drinking window, to soften the tannins and reveal its full aromatic spectrum.
