Tasting Notes
In the glass, DOPE Bio 2022 Rosé shows a luminous, slightly hazy pink hue, reflecting its unfiltered nature and gently wild personality. The nose is instantly engaging: tart rhubarb and red gooseberries lead the way, supported by a subtle smoky note and a touch of wild herbs that add depth and intrigue. On the palate, this rosé is bright, zesty and full of life. A fine, natural spritz of carbon dioxide (“Fizzelchen”) tickles the tongue, amplifying its freshness and making each sip feel effortless. Red summer berries, hibiscus and a hint of bitter orange create a juicy yet precise flavor profile, with a slight textural grip that keeps it from ever feeling simple. A whisper of residual sweetness is beautifully balanced by keen acidity and a gentle phenolic bite, giving the wine both immediate charm and enough structure to hold for a couple of years, though it’s clearly made to be enjoyed young and vibrant.
Production
Sourced from Blaufränkisch vines in the esteemed Leithaberg area of Burgenland, the DOPE Bio Rosé draws its tension and minerality from limestone- and schist-driven soils, influenced by the moderating breezes of the nearby Neusiedlersee. Farming is certified organic and strongly biodynamic in spirit, with hand-harvesting to ensure only perfectly ripe, healthy bunches are brought to the cellar. The grapes are pressed as whole clusters directly, yielding a delicate color and fine structure, then fermented with indigenous yeasts. The wine is left unfiltered and retains a touch of natural carbon dioxide and a small amount of residual sugar, resulting in a slight, refreshing spritz. It is bottled under crown cap, underscoring its natural, no-fuss, high-drinkability style.
Food & Serving
This lively rosé is a superb partner for casual, flavor-packed dishes: think charcuterie boards, grilled vegetables, ceviche, spicy Asian salads, or lightly spiced Middle Eastern mezze. Its tart red fruit and subtle bitterness also work beautifully with tomato-based dishes, grilled fish, or fried snacks. Serve well-chilled at around 8–10°C to highlight its freshness and natural fizz. Decanting is not necessary, but opening the bottle a few minutes before pouring allows the gentle spritz and smoky nuances to find their balance in the glass.
