Tasting Notes
In the glass, this 2020 Viognier is a luminous straw yellow with subtle golden reflections, hinting at both ripeness and concentration. The nose is expressive and layered: yellow blossoms, orange zest and ripe honeydew melon are joined by more ethereal nuances of alpine herbs, a whisper of pine needle and a fine, stony minerality. On the palate, Madame de Bio is rich yet finely poised. The texture is supple and creamy from extended lees contact, but kept in check by a fresh, well‑integrated acidity and a distinctly mineral backbone. Flavors of stone fruit, ripe pear, melon and citrus oil unfold gradually, supported by a gentle spice and a savory, almost saline finish. Production
The grapes for Madame de Bio are sourced from vineyards in the Ardèche, where Viognier thrives on stony, well‑drained soils under a warm southern Rhône climate, tempered by cool nights that help preserve acidity and aromatic finesse. The fruit is hand‑harvested at low yields to ensure optimal ripeness and concentration, then direct‑pressed to retain delicacy and freshness. Fermentation starts spontaneously with indigenous yeasts, followed by a careful, slow fermentation and regular bâtonnage (lees stirring) to build texture and depth. The wine is then aged for 12 months on fine lees in large 500‑liter oak barrels, bringing subtle complexity without overt wood influence, and is bottled with minimal intervention: no fining, gentle filtration and only a modest addition of sulfur.

This Viognier’s combination of aromatic intensity and textural richness makes it a versatile partner at the table.
