Tasting Notes
In the glass, the 2019 Clos Béru displays a luminous straw-yellow color with green reflections, signaling freshness and youth. The nose is refined yet intense, opening with classic Chablis notes of oyster shell, chalk and wet stone, layered with crisp green apple, lemon zest, white flowers and a subtle hint of almond and brioche from lees aging. On the palate, this wine is taut and vibrant, with a racy acid backbone that frames its concentrated citrus, green pear and crunchy apple fruit. A fine, saline minerality runs through the mid-palate, giving the wine both tension and length, while delicate notes of flint, hazelnut and subtle creamy texture add complexity without ever weighing it down. The finish is long, precise and mouthwatering, making each sip feel both energetic and refined. Production
Clos Béru is a historic, walled monopole vineyard perched on a high plateau in the village of Béru, in the heart of Chablis. The soils are classic Kimmeridgian limestone rich in marine fossils, which impart the signature chalky, saline character that defines great Chablis. Farmed organically (Bio) with low yields and meticulous attention to biodiversity, the vines are tended and harvested by hand to preserve fruit integrity and ensure optimal ripeness. In the cellar, Château de Béru works with native yeasts for a spontaneous fermentation, often in a combination of stainless steel and older oak to add texture without overt wood influence. The wine is typically aged for an extended period on its fine lees, with minimal intervention and a restrained use of sulfur, allowing the terroir and vintage character of 2019 to shine through with clarity.
Food & Serving
This Chablis is a natural partner for seafood, especially oysters, shellfish, sushi, scallops and simply grilled fish, where its saline edge and bright acidity echo the flavors of the sea. It also pairs beautifully with goat cheese, fresh cheeses, lightly creamy poultry dishes, vegetable tarts and delicately seasoned white asparagus or artichokes. Serve well-chilled but not icy, ideally around 10–12°C (50–54°F), to allow its aromatics and texture to fully express themselves.
