Tasting Notes
In the glass, this Champagne shows a pale straw to light gold hue, edged with green reflections and a very fine, persistent bead. The nose is focused and detailed, opening with lemon zest, white grapefruit and crisp green apple, followed by notes of chalk dust, fresh brioche, almond blossom and a delicate hint of white peach and flint. On the palate, the wine is taut, linear and deeply mineral, balancing bright citrus and orchard fruit with a palpable chalky texture. Layers of Meyer lemon, crunchy pear and underripe stone fruit are wrapped in saline, almost iodine-like nuances, with subtle pastry and hazelnut tones emerging as the wine warms in the glass. The extra-brut dosage keeps the finish laser-focused, long and mouthwatering. While already impressive in its youth, this 2020 has the structure and acidity to evolve beautifully over 7–10 years, gaining more creaminess, complexity and brioche-driven depth with time in bottle.
Production
Sourced from Grand Cru Chardonnay vineyards in Avize, this Hors Série cuvée reflects the classic Côte des Blancs terroir of pure chalk and limestone subsoils, which lend the wine its signature tension and mineral backbone. The grapes are harvested by hand at optimal ripeness to preserve both freshness and aromatic definition. In keeping with Chartogne-Taillet’s philosophy, vinification is carried out with minimal intervention: gentle pressing, fermentations in a mix of stainless steel and oak (depending on parcel and vintage), and careful élevage on the lees to build texture without masking the purity of the fruit. The wine is bottled for secondary fermentation and aged on its lees to gain complexity before being disgorged with a restrained Extra Brut dosage, highlighting the precision and energy of this Grand Cru Chardonnay.

This Champagne is a superb partner for refined, mineral-driven dishes: think oysters on the half shell, scallop crudo, turbot or sole with beurre blanc, sushi and sashimi, or a simple tartare of sea bass and citrus.
