Tasting Notes
In the glass, the 2007 Blanc des Millénaires displays a luminous, pale gold hue with fine, persistent bubbles that form a delicate, creamy mousse. The nose is refined and layered, offering aromas of lemon curd, white flowers, crisp green apple and pear, intertwined with notes of brioche, toasted hazelnut, chalky minerality and subtle vanilla from long lees aging. On the palate, this Champagne is both precise and generous, with a tension that reflects its cool-climate origins and a richness born from time in the cellar. Flavours of citrus zest, ripe stone fruits and baked apple are framed by nuances of almond, buttered pastry and fresh cream, all carried by a vibrant, saline acidity and an exceptionally long, mouthwatering finish. Production
Blanc des Millénaires is sourced exclusively from Chardonnay grown in some of Champagne’s most prized chalky crus, primarily the Grand Crus of the Côte des Blancs such as Avize, Cramant, Oger and Le Mesnil-sur-Oger. These deep chalk soils and cool conditions give the wine its hallmark tension, finesse and mineral cut. Grapes are hand-harvested at optimal ripeness, parcel by parcel, to preserve freshness and purity. After gentle pressing, the base wines are vinified in stainless steel to retain clarity of fruit, then blended with meticulous precision before undergoing secondary fermentation in bottle. The bottles are then aged for an extended period—far beyond the appellation’s minimum—on their lees in the historic chalk cellars of Charles Heidsieck, developing the creamy texture, fine bead and complex autolytic character that define Blanc des Millénaires. Disgorgement is followed by a carefully judged dosage to balance intensity and elegance.
Food & Serving
This refined blanc de blancs is an excellent match for delicate, high-quality ingredients such as oysters, caviar, scallop carpaccio, turbot, poached lobster or sashimi-grade white fish. It also pairs beautifully with fine poultry in cream sauces, truffle risotto, or aged hard cheeses like Comté or Parmesan. Serve well-chilled at around 10–12°C (50–54°F) in a white wine or tulip-shaped Champagne glass to fully appreciate its aromatic complexity and texture. Younger bottles will benefit from a brief 15–20 minute opening in the glass rather than an extended decant, while more mature bottles can be gently poured into a chilled carafe if desired, to help the bouquet unfurl.
