Production
La Sereine is sourced from selected vineyards across the Chablis appellation in Burgundy’s northernmost reaches, where Kimmeridgian limestone and fossil-rich clay soils impart the region’s signature flinty, iodine-tinged minerality to Chardonnay. The cool continental climate, combined with careful vineyard management and controlled yields, preserves acidity and aromatic finesse. Grapes are harvested at optimal maturity, then gently pressed and fermented at controlled temperatures, primarily in stainless-steel tanks to highlight purity and freshness. The wine is aged on fine lees for added texture and complexity, with minimal or no new oak influence, allowing the terroir-driven character of Chablis to take center stage.
