Tasting Notes
In the glass, the 2023 Caymus Cabernet is almost opaque, with a dense purple-black core and a vivid, inky rim. The nose is intense and layered, overflowing with crème de cassis, ripe blackberry and dark cherry, wrapped in notes of violet, dark chocolate, milk caramel and subtle anise. Underneath, hints of baking spices and vanilla from carefully judged oak add further complexity without overwhelming the fruit. On the palate, this is classic Caymus: full-bodied, plush and velvety, with a rich, almost hedonistic sense of volume. Layers of dark chocolate, mocha, sweet pipe tobacco, black licorice and warm spice unfold over a core of concentrated black fruit. Production
The 2023 Caymus Cabernet Sauvignon is sourced from carefully selected parcels across Napa Valley, many planted with older, low-yielding vines that naturally produce smaller, intensely flavoured berries. Minimal irrigation encourages the vines to dig deep into the valley’s varied soils, promoting both concentration and a clear sense of place. The 2023 growing season was marked by a long, steady ripening period, allowing Caymus to do what they are renowned for: letting the grapes hang to an unusually high level of ripeness, a cornerstone of their signature style. Harvesting is carried out with precision to capture optimal maturity, after which the fruit is gently handled in the cellar. Fermentation and maceration are managed to extract deep colour, plush tannins and saturated flavour, followed by aging in primarily French oak barrels, where the wine gains further texture and aromatic complexity while keeping the spotlight firmly on the rich Napa fruit.
