Tasting Notes
In the glass, the 2023 Chardonnay appears pale to medium lemon with a subtle golden hue, hinting at its time in barrel and on lees. The nose starts out a touch reserved, then steadily opens to reveal a classic Chardonnay profile: notes of green banana and orchard fruits, fine yeast aromas, delicate brioche, and a whisper of toasted nuts, all underpinned by cool mineral tones and a light citrus lift. On the palate, the wine is finely textured and precise, with a vibrant but well-integrated acidity that carries the flavors long across the tongue. You can expect layers of crisp apple and pear, restrained stone fruit, and those subtle bakery notes from extended lees contact, framed by a discreet, well-judged touch of oak from the Halbstück (600L) barrels. The finish is long, saline and linear, promising further complexity with a few years in bottle. While already enjoyable in its youth, this Chardonnay has the structure and freshness to age gracefully for 5–7 years, gaining more creaminess and tertiary nuance over time.
Production
The grapes for Carsten Saalwächter Chardonnay 2023 come from cool, limestone-influenced sites in Rheinhessen, where the combination of calcareous soils and a moderate climate naturally favors elegance and tension over opulence. Only perfectly healthy grapes were harvested, then given a short period of skin contact (maischestandzeit) to enhance texture and aromatic complexity. The fruit was pressed extremely gently and slowly to preserve purity, after which the must was transferred into traditional 600-liter Halbstück barrels. Around one-third of these were new, ensuring a carefully measured oak influence rather than dominance. The wine then matured for two winters on the full lees, with minimal intervention, allowing it to gain depth, fineness and a beautifully integrated structure before bottling.
Food & Serving
This Chardonnay is a versatile partner at the table, shining alongside refined dishes rather than overpowering them. It pairs beautifully with grilled or pan-seared sea bass, turbot, or cod, as well as scallops, lobster or delicate shellfish in butter-based sauces. Poultry dishes—roast chicken with herbs, guinea fowl, or veal in a light cream sauce—also work exceptionally well, as do mushroom risottos or vegetable dishes featuring cauliflower, fennel or celeriac. Serve at 10–12 °C: cooler for aperitif-style drinking, slightly warmer for gastronomic pairings to let the aromatics fully unfurl. A short decant of 20–30 minutes can help the wine open up, especially in its first few years, revealing more of its subtle brioche and mineral notes.
