Production
The Gualto Riserva is sourced from carefully selected parcels within the Camigliano estate in the southwestern area of Montalcino, where a combination of clay-limestone soils, good drainage and warm days moderated by cool breezes helps Sangiovese Grosso reach optimal ripeness while preserving acidity. Grapes are typically harvested by hand, with strict selection in the vineyard and at the sorting table to ensure only the finest clusters make it into the Riserva. After fermentation in temperature-controlled tanks, the wine is traditionally aged for an extended period in large oak casks and/or carefully chosen barrels, followed by further bottle maturation before release, in accordance with Brunello di Montalcino Riserva regulations. This lengthy élevage polishes the tannins and adds aromatic complexity without overshadowing the character of the fruit and terroir.

This Brunello Riserva is a natural partner for rich, savory dishes such as bistecca alla fiorentina, slow-braised lamb shanks, wild boar ragù over pappardelle, truffle risotto, and aged hard cheeses like Parmigiano Reggiano or Pecorino Toscano.
