Caillou Blanc du Château Talbot is sourced from carefully tended vineyard parcels in Saint-Julien, where gravelly soils over limestone and clay provide ideal drainage and help preserve freshness in the grapes. The maritime influence of the nearby Gironde estuary moderates temperatures, allowing for slow, even ripening and excellent aromatic development. Grapes are typically harvested by hand at optimal maturity to ensure a meticulous selection of bunches. In the cellar, the must is gently pressed and fermented, often in French oak barrels, with a portion of new oak used to add texture and complexity without overwhelming the fruit. Lees stirring (bâtonnage) may be employed during maturation to enhance mouthfeel, resulting in a white Bordeaux that is both expressive and elegantly structured.
Food & Serving
This white Bordeaux is a natural partner for refined seafood dishes such as seared scallops, grilled turbot, sole meunière, or oysters and shellfish platters.
