Tasting Notes
In the glass, the 2020 Vintage Collection Satèn pours a luminous straw-gold with fine, persistent bubbles that form a delicate, continuous bead. The nose is immediately inviting, with notes of ripe orchard fruit—pear, Golden Delicious apple, and white peach—layered with hints of citrus zest, acacia blossom, fresh brioche, almond cream, and a gentle mineral edge. On the palate, the wine is soft, rounded, and exquisitely balanced, with a satiny mousse that glides rather than sparkles aggressively. Production
The grapes for Ca' del Bosco’s Vintage Collection Satèn Brut 2020 come from selected hillside vineyards in Lombardy’s Franciacorta region, where a mix of glacial moraines, limestone, and clay soils contribute tension, minerality, and depth to the wine. Chardonnay is the star here, with a supporting role from Pinot Bianco, both harvested by hand to ensure pristine fruit selection in the vineyard. After gentle pressing in an oxygen-free environment to preserve purity and aromatics, the must is fermented in a combination of stainless steel and small oak barrels, followed by a period of maturation on the fine lees to build texture and complexity. The second fermentation takes place in bottle using the traditional method, with a deliberately lower tirage sugar addition to achieve the Satèn style’s trademark softer pressure and finer mousse. Extended aging on the lees in Ca’ del Bosco’s cellars enhances the wine’s creamy texture and layered complexity before disgorgement and a carefully balanced dosage.

This Satèn is an elegant partner for refined dishes and delicate flavors. It pairs beautifully with seafood such as scallops, langoustines, lobster, and lightly poached fish, as well as sushi, sashimi, and crudo. Creamy risottos—especially with asparagus, mushrooms, or shellfish—are natural companions, as are poultry dishes, soft-ripened cheeses, and delicate vegetable tempura. Serve well-chilled at around 8–10°C (46–50°F) to highlight its finesse and freshness. A brief 10–15 minutes in a wide-bowled sparkling wine glass or a white wine glass rather than a narrow flute will allow the aromas and texture to fully express themselves; extended decanting is not necessary.
