Production

Chardonnay is the star here, with a supporting role from Pinot Bianco, both harvested by hand to ensure pristine fruit selection in the vineyard. After gentle pressing in an oxygen-free environment to preserve purity and aromatics, the must is fermented in a combination of stainless steel and small oak barrels, followed by a period of maturation on the fine lees to build texture and complexity. The second fermentation takes place in bottle using the traditional method, with a deliberately lower tirage sugar addition to achieve the Satèn style’s trademark softer pressure and finer mousse. Extended aging on the lees in Ca’ del Bosco’s cellars enhances the wine’s creamy texture and layered complexity before disgorgement and a carefully balanced dosage.
