Tasting Notes
In the glass, Première Cuvée shows a luminous, pale gold color with fine, persistent bubbles that form a delicate mousse. The nose opens with notes of citrus zest, green apple and pear, layered with hints of white flowers, chalky minerality and a subtle brioche character from extended lees aging. On the palate, this Extra Brut is precise and vibrant, with a dry, linear profile that showcases lemon, crunchy orchard fruits and a touch of stone fruit. Underneath lies a savory, saline edge and a whisper of toasted nuts, giving complexity and length. The low dosage highlights its mineral backbone and very pure finish. While delicious now, it has the structure and acidity to evolve gracefully for several years in bottle, gaining more brioche, hazelnut and honeyed notes over time.

Production
Première Cuvée is a multi-cru, multi-vintage blend sourced from a wide selection of premium vineyards across Champagne, including chalk-rich sites that give finesse and tension. It is typically composed of the three classic Champagne varieties—Chardonnay for elegance, Pinot Noir for structure and red-fruit character, and Meunier for suppleness and approachability. Grapes are harvested by hand to ensure optimal ripeness and strict selection, then gently pressed in fractional cuvées to preserve purity. Fermentation takes place primarily in stainless steel, with a portion in barrel depending on the year, followed by an extensive use of reserve wines to build complexity. The wine is aged for several years on its lees in bottle, far beyond the appellation minimum, and finished with a very low dosage to achieve the Extra Brut style and a transparent expression of terroir. Disgorgement dates are indicated on the back label, underscoring the maison’s focus on precision and transparency.

Food & Serving
This Champagne is a superbly versatile food partner. Its tension and dryness make it ideal with oysters, shellfish, sashimi, caviar and other delicate seafood, while its subtle brioche notes flatter dishes like sole meunière, scallop carpaccio or light poultry and veal in cream-based sauces. It also works beautifully with hard cheeses such as Comté or aged Gouda. Serve well chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass or an open bottle before serving is enough to let the wine open up; decanting is generally not necessary, though pouring into a larger-bowled white wine glass can enhance its aromatic complexity.
