Tasting Notes
In the glass, Absimils Extra Brut 2019 shows a pale straw to light gold hue, animated by fine, persistent bubbles and a delicate mousse. The nose is expressive yet refined, with notes of crisp pear, green apple, white peach and lemon zest layered over fresh brioche, white blossoms, almond and a subtle chalky minerality. Production
Sourced from estate vineyards in the southern reaches of the Champagne region, Brocard Pierre’s Absimils Pinot Blanc grows on predominantly limestone and clay-limestone soils that lend the wine its hallmark minerality and tension. The vines are farmed with a strong focus on environmental respect, using careful vineyard work and low yields to ensure concentration and purity of fruit. Grapes are harvested by hand at optimal ripeness to preserve freshness and delicate aromatics, then gently pressed in whole bunches. Fermentation takes place in a combination of stainless steel and, in part, neutral oak to build texture without masking the grape’s character, followed by extended aging on the lees to develop depth and finesse. Disgorged with a very low dosage in the Extra Brut style, the wine is bottled with minimal intervention to capture a transparent expression of the vintage and terroir.
