In the cellar, Anne Boisson favors a minimalist, precise approach—gentle pressing, temperature-controlled fermentation and élevage in a combination of stainless steel and neutral oak (or older barrels) to maintain purity of fruit and a clean, vibrant profile. The result is a terroir-driven white that feels both authentic and finely polished.
