Tasting Notes
In the glass, this Champagne shows a luminous pale gold colour with fine, persistent bubbles that form a delicate, creamy mousse. The nose is refined and layered, opening with notes of ripe citrus, green apple and pear, followed by hints of brioche, toasted nuts, chalky minerality and a touch of white flowers. Subtle autolytic tones from extended lees ageing add complexity without overpowering the fruit. On the palate, Cuvée Perpétuelle is precise, dry and tightly chiselled, driven by vibrant acidity and a strong mineral backbone. Expect flavours of lemon zest, crunchy orchard fruits, stone fruit and a saline, chalky nuance, with delicate notes of pastry and hazelnut from the perpetual reserve wines. The finish is long, clean and mouth-watering, with a chalk-laced persistence that invites another sip. This non-vintage cuvée has the structure to evolve nicely over the next 5–7 years, gaining further complexity and softness while retaining its tension.
Production
Bonnet-Ponson works primarily with premier cru vineyards around Chamery, Ecueil and Vrigny in the Montagne de Reims, where the soils are dominated by chalk, limestone and clay, giving both tension and depth to the wines. The estate is known for meticulous, environmentally conscious viticulture, often with organic practices and low yields to concentrate flavour. Grapes are hand-harvested at optimal ripeness and carefully sorted before gentle pressing. Cuvée Perpétuelle is based on a blend of Pinot Noir, Meunier and Chardonnay, incorporating a perpetual reserve of older vintages to build complexity and consistency. Fermentation typically uses indigenous yeasts, with minimal intervention, followed by extended ageing on the lees in bottle. Disgorged with no dosage (Brut Nature), the wine is released only when it has developed harmony and balance between its vibrant fruit and mineral structure.

This Brut Nature Champagne shines with clean, precise flavours, making it a versatile partner at the table. It pairs beautifully with oysters, shellfish platters, scallops, sushi and sashimi, as well as delicate white fish, ceviche and simply grilled prawns. On land, try it with goat’s cheese, soft-rind cheeses, poultry with light citrus sauces or vegetable-based starters like fennel salad or asparagus. Serve well chilled, ideally around 8–10°C (46–50°F). A brief 10–15 minutes in a carafe or in the glass can help the wine open aromatically, especially if served toward the upper end of the temperature range.

Bonnet-Ponson is a family-run grower estate based in Chamery in the Montagne de Reims, working almost exclusively with their own vines to craft characterful, terroir-driven Champagnes. Established in the nineteenth century, the domaine has gradually built a reputation for precise, vinous wines that emphasise sustainable farming and low-intervention winemaking. Much of the vineyard area is farmed organically or with similar principles, and the house is known for using reserve wines and long lees ageing to give depth and texture.
