Tasting Notes
In the glass, Cuvée Les Palis shows a bright, pale gold color with a fine, persistent bead of bubbles that forms a delicate mousse. Cuvée Les Palis is drawn from carefully chosen parcels within the Champagne region, where cool climate, chalk-rich soils, and well-exposed slopes combine to deliver grapes with naturally high acidity and aromatic purity. The fruit is harvested by hand, in line with regional tradition and regulations, to ensure only the healthiest bunches reach the press. After gentle pressing, the base wines ferment in temperature-controlled vessels, preserving freshness and varietal character. The final blend brings together Chardonnay, Pinot Noir, and Pinot Meunier to achieve a harmonious balance of elegance and depth. Following the secondary fermentation in bottle (méthode traditionnelle), the wine rests sur lie for an extended period, gaining complexity and a fine mousse before disgorgement and a carefully judged Brut dosage.
