Grapes are hand-harvested at optimal ripeness and vinified cru by cru, grape by grape, in small oak barrels—an artisanal approach that enhances texture and complexity. The rosé component is created by blending a carefully selected red still wine from old-vine Pinot Noir vineyards into the white base wines before bottling for secondary fermentation. The wine then undergoes an extended aging on lees in the Bollinger cellars, far beyond the appellation minimum, before riddling, disgorgement, and a measured dosage to balance intensity, freshness, and finesse.
