+ Read moreBollinger Brut Spécial Cuvée is one of Champagne’s true benchmarks – a rich, complex non‑vintage cuvée that captures the house’s unmistakably powerful style. Crafted primarily from Pinot Noir and aged extensively on lees, it offers depth and finesse rarely found in a house Champagne. First created in 1911, Spécial Cuvée has long stood as the reference point for Bollinger’s craftsmanship and its uncompromising approach to quality.
Tasting Notes
In the glass, Bollinger Brut Spécial Cuvée shows a deep golden hue with a fine, persistent bead that hints at its long maturation. The nose is generous and expressive: ripe orchard fruits (baked apple, pear), brioche, toasted hazelnuts, and hints of dried flowers and citrus zest, all wrapped in a subtle, smoky mineral note. On the palate, this Champagne is full‑bodied and precise, with Bollinger’s signature combination of richness and tension. Flavors of stone fruit, Mirabelle plum, roasted nuts, and lemon curd are layered over tones of biscuit and cream, carried by a vibrant yet refined acidity. The finish is long, dry and savory, leaving lingering notes of brioche and chalk. While immediately rewarding on release, Spécial Cuvée can develop further complexity with a few years of additional cellaring, gaining more honeyed, nutty nuances.
Production
Sourced from estate vineyards and long‑term grower partners across Champagne, Bollinger Brut Spécial Cuvée is anchored in high‑quality crus, with a strong proportion of Pinot Noir from the Montagne de Reims and Aÿ, complemented by Chardonnay and Meunier from select sites. The grapes are harvested by hand to ensure optimal selection. A significant portion of the wines is vinified in small oak barrels, bringing texture, structure and subtle spice, while the rest is fermented in temperature‑controlled tanks to preserve purity of fruit. A hallmark of Spécial Cuvée is the extensive use of reserve wines, some aged in magnum under cork, which are blended into the final cuvée to add depth and consistency. The wine then spends a long period maturing on its lees in Bollinger’s historic cellars before disgorgement and a carefully judged brut dosage.
Food & Serving
This is a gastronomic Champagne that shines at the table. It pairs beautifully with roasted poultry, veal, seared scallops, firm white fish, or classic French dishes like mushrooms on toast and creamy poultry sauces; it’s equally at home with aged hard cheeses and finely sliced cured meats. Serve well‑chilled but not icy, ideally at 8–10°C (46–50°F), to allow the full aromatic range to unfold. While decanting is not traditional for Champagne, pouring the wine into larger, tulip‑shaped glasses and giving it a few minutes in the glass will help reveal its complexity.
Producer
Founded in 1829 in Aÿ, in the heart of Champagne, Bollinger is one of the region’s most revered and independently minded houses. Still family‑influenced and deeply rooted in its vineyards, Bollinger has built its reputation on a Pinot Noir‑driven style that emphasizes structure, longevity and a distinctly vinous character. The house farms a high proportion of its own premier and grand cru vineyards, adheres to rigorous sustainable viticulture, and remains one of the few in Champagne to ferment a substantial share of its wines in oak barrels. Recognized worldwide for its quality – and famously favored by figures from Winston Churchill to James Bond – Bollinger stands as a benchmark for powerful, ageworthy Champagne.
