Tasting Notes
In the glass, this Cartizze shows a brilliant, pale straw yellow hue with shimmering green reflections and a very fine, persistent bead of bubbles. The mousse is delicate yet steady, forming a soft crown at the surface. The nose is immediately inviting with notes of ripe pear, white peach, golden apple and acacia blossom, layered with hints of citrus zest, almond, and a subtle pastry-like sweetness. On the palate, the wine is silky and polished, with a vibrant yet gentle acidity that balances its Dry (slightly off‑dry) style. Flavours of juicy stone fruit, pear and melon unfold alongside floral tones and a touch of honeyed richness, all carried on a creamy texture and ultra-fine bubbles. The finish is long, graceful and delicately mineral, leaving a pleasantly fresh, slightly sweet impression. Best enjoyed young to fully appreciate its aromatic intensity and vibrancy, though it will hold beautifully for a couple of years after release.
Production
The grapes for this wine come from the famed Cartizze hill in Valdobbiadene, a mere 107 hectares of steep, terraced vineyards rising to around 300 meters above sea level. Here, vines cling to the slopes, benefitting from excellent sun exposure, well‑drained rocky soils, and constant protection from cold winds – conditions that promote slow, even ripening and concentrated flavour. Grapes are typically harvested by hand due to the steepness of the terrain, allowing for careful selection of the healthiest, ripest bunches. In the cellar, the base wines are fermented at controlled, cool temperatures to preserve delicate aromatics, and the secondary fermentation takes place in pressurized tanks (Charmat-Martinotti method), fine-tuned by Bisol 1542 to achieve an exceptionally fine, persistent perlage and a perfectly balanced Dry dosage.
Food & Serving
This Cartizze Dry is a superb choice as an elegant aperitif and an ideal partner for refined antipasti. It pairs beautifully with shellfish (especially scallops and prawns), sushi and sashimi, delicate fish dishes, and light vegetable tempura. Its subtle sweetness also makes it a classic companion to fruit tarts, panettone, Venetian pastries and mild, creamy cheeses. Serve well-chilled at about 6–8°C. Decanting is not necessary; simply open the bottle a few minutes before serving to let the mousse settle and the aromas open up in the glass.
