Conceived as the ideal prototype of Wagram Grüner Veltliner, Fass 4 brings together the character of multiple small parcels into one precise, expressive cuvée. First created in the family cellar in the original “Fass 4” (cask no. 4) by Bernhard Ott’s father, it has evolved into a modern classic that captures both regional typicity and vintage personality with striking clarity.
Tasting Notes
In the glass, Fass 4 Bio 2024 typically shows a pale straw to light lemon color with a youthful, greenish shimmer that hints at freshness and vitality. The nose is refined yet inviting, offering delicate aromas of green apple, vineyard peach, lime zest and juicy pear, layered with white pepper, subtle herbal notes and a touch of wet stone. On the palate, this wine is crisp, precise and elegantly textured, balancing juicy fruit with a fine, linear acidity. Expect flavors of green apple, citrus, stone fruit and a gentle, spicy Veltliner snap—white pepper, a hint of fennel and a light, saline minerality that speaks clearly of Wagram’s loess soils. The finish is clean, dry and persistent, with a subtle creaminess from its time on the lees that rounds out the freshness without weighing it down. Enjoyable in its youth for its purity and vibrancy, Fass 4 generally has the capacity to develop additional complexity over 3–5 years, gaining more texture, nuttiness and honeyed nuances while retaining its structure.
Production
The grapes for Fass 4 Bio 2024 come from selected small parcels across Wagram, a region known for its deep loess soils that lend Grüner Veltliner both charm and structure. These wind-blown, chalky loess terraces store water and warmth, giving the wines a distinctive combination of ripeness, spice and mineral lift. All vineyards are farmed organically (and in practice often biodynamically), with careful canopy management and low yields to ensure concentration and balance. Each parcel is harvested separately, typically picked by hand at optimal ripeness to preserve freshness and aromatic precision. The lots are then vinified individually, usually with gentle pressing, spontaneous or carefully controlled fermentations in stainless steel, and an extended period on the fine lees. Only later are they blended into the final Fass 4 cuvée, allowing Bernhard Ott to fine-tune the balance of fruit, spice and minerality while avoiding oak influence so the origin and vintage expression remain crystal clear.
Food & Serving
Fass 4 Bio 2024 is a wonderfully versatile food wine, particularly well suited to light, flavorful dishes. It pairs beautifully with Austrian classics like Wiener Schnitzel, fried chicken or cold cuts, as well as modern vegetable-led cuisine—think asparagus, artichoke, zucchini, fresh salads and dishes with green herbs. Its crisp acidity and subtle spice make it a natural match for freshwater fish, sushi, ceviche, shellfish and lightly spiced Asian dishes such as Vietnamese rolls or Thai salads. Serve well-chilled at around 8–10°C (46–50°F) in medium-sized white wine glasses to highlight both aromatics and texture. Decanting is not necessary, but opening the bottle 15–20 minutes before serving allows the wine to unfurl its fruit and peppery nuances.
