Tasting Notes
In the glass, Ayala Brut Nature is pale gold with fine, persistent bubbles that form an elegant, lively mousse. The nose is clean and focused, with notes of lemon zest, green apple, white flowers, chalky minerality, and hints of freshly baked brioche and hazelnut from extended lees aging. On the palate, it is racy and linear, with crisp citrus, crunchy pear, and subtle stone-fruit nuances supported by a strong mineral backbone. The absence of dosage gives the wine a striking dryness and salinity, while the long autolysis adds texture, creaminess, and complexity. Production
Ayala Brut Nature is crafted from Chardonnay, Pinot Noir, and Pinot Meunier sourced from top crus across the Champagne region of France, with a strong emphasis on vineyards that deliver ripe yet taut fruit and vivid minerality. The grapes are harvested by hand to ensure careful selection, preserving only the healthiest, most expressive bunches. After gentle pressing, the base wines are vinified by parcel in stainless steel to retain freshness and precision, then carefully blended to create the house’s signature balance. The cuvée undergoes a second fermentation in bottle and is aged for nearly four years on the lees in Ayala’s cool cellars, encouraging an extended autolysis that adds depth and finesse. At disgorgement, no dosage is added, resulting in a Brut Nature that faithfully reflects the quality of the fruit and the character of its origins.
Food & Serving
This ultra-dry Champagne is an excellent match for pure, delicately flavored dishes where its tension and minerality can really shine. Think freshly shucked oysters, sashimi and crudo, ceviche, scallop carpaccio, steamed shellfish, sushi, or simply prepared white fish with citrus and herbs. It also pairs beautifully with goat cheese, fresh cheeses, and light vegetable dishes such as asparagus or fennel salad. Serve well chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass or a quick splash-decant can help the wine open up aromatically, but prolonged decanting is not necessary; its linear, precise structure is best enjoyed fairly fresh from the bottle.
