Tasting Notes
In the glass, Ayala Brut Majeur shows a pale gold hue with a fine, persistent mousse and delicate streams of bubbles that speak to its careful aging on the lees. The nose is clean and expressive, with aromas of fresh citrus, green apple, white flowers, and a touch of brioche and almond, underpinned by subtle mineral notes. On the palate, this Champagne is crisp and vibrant, led by the structure and red-fruited depth of Pinot Noir, the finesse and tension of Chardonnay, and the roundness from Pinot Meunier. Expect flavors of lemon zest, pear, apple, and stone fruit, layered with hints of toast, hazelnut, and a saline edge that adds complexity. Production
Ayala Brut Majeur is produced in the heart of Champagne, primarily from vineyards in and around the historic village of Aÿ, as well as carefully selected crus across the region. The blend typically features a Pinot Noir backbone for structure and intensity, with Chardonnay bringing elegance and lift and Pinot Meunier contributing fruitiness and approachability. Grapes are harvested by hand to ensure careful selection in the vineyard. In the cellar, each parcel is vinified separately in stainless steel to preserve freshness and terroir expression, before being blended into the final cuvée. The wine then undergoes secondary fermentation in bottle and ages on its lees for an extended period—often significantly longer than the appellation minimum—before disgorgement. A restrained dosage keeps the style notably dry, emphasizing finesse, clarity, and balance.

Food & Serving
Ayala Brut Majeur is an exceptionally versatile Champagne at the table. It is ideal as an aperitif but shines with delicate dishes such as oysters, prawns, and other shellfish, as well as sushi, ceviche, and lightly grilled fish. It also pairs beautifully with poultry, creamy cheeses, and refined canapés. Serve well-chilled at about 8–10°C (46–50°F). Decanting is not necessary, but pouring into proper tulip-shaped Champagne glasses will help the aromas unfold and the texture show at its best. Allowing the wine a few minutes in the glass as it warms slightly will reveal additional layers of complexity.
