Tasting Notes
In the glass, L'Ormarins Brut Classique shows a pale straw hue with a fine, persistent bead and a lively mousse. The nose is fresh and expressive, with aromas of citrus blossom, green apple and lemon zest, layered with hints of toasted brioche, almond and a delicate chalky minerality. On the palate, it is crisp, dry and beautifully balanced. Bright acidity frames flavors of Granny Smith apple, pear, citrus and subtle stone fruit, underpinned by notes of fresh bread dough, biscuit and a touch of nutty complexity from time on lees. The finish is clean and precise, with a lingering, mouthwatering length that invites another sip. Best enjoyed within a few years of release for its vibrancy, it will also hold well for several more years, gaining a little extra autolytic depth and creaminess with careful cellaring.
Production
Sourced from carefully selected cool-climate vineyards in prime South African sites, the grapes benefit from moderating breezes and diverse, well-drained soils that help preserve natural freshness and aromatic intensity. The Chardonnay and Pinot Noir are harvested by hand at optimal ripeness to retain acidity and purity of fruit. After gentle pressing, the base wines are fermented separately in stainless steel to highlight clarity and precision, then blended to achieve the house style. The second fermentation takes place in bottle following the traditional Méthode Cap Classique process, with extended lees aging to build texture, fine bubbles and subtle brioche-like complexity before disgorgement and final dosage.
Food & Serving
This Brut Classique is an excellent aperitif and a versatile food partner. Pair it with oysters, prawns, salmon tartare, sushi, ceviche or lightly fried calamari for a classic match, or serve alongside soft cheeses, charcuterie, roast chicken, or delicately spiced Asian dishes. Serve well chilled at around 6–8°C (43–46°F). Decanting is not necessary; simply pour gently into flutes or white wine glasses to allow the aromas to open as the wine warms slightly in the glass.
