Tasting Notes
In the glass, the 2022 Spätburgunder Ingelheim shows a bright, translucent ruby color with a delicate, almost shimmering rim. The nose is precise and finely perfumed, with aromas of wild red cherries, raspberry, and cranberries, layered with rose petals, subtle smoke, dried herbs, and a gentle touch of spice and forest floor. The fruit for AdamsWein Spätburgunder Ingelheim 2022 comes from carefully selected vineyard parcels around Ingelheim, where limestone and loess soils dominate and help deliver Pinot Noir with tension, perfume, and clarity. The grapes are harvested by hand to ensure only perfectly healthy clusters make it to the cellar, with strict selection both in the vineyard and on the sorting table. Fermentation typically proceeds with a high proportion of whole berries and, depending on the parcel and year, some whole clusters, using predominantly spontaneous fermentation with indigenous yeasts. Gentle extraction through pump-overs or punch-downs preserves finesse rather than power. The wine is then aged in a mix of used small oak barrels or larger wooden casks, allowing it to gain texture and complexity without masking the purity of fruit and terroir expression.
