Tasting Notes
In the glass, the 2023 Quintaluna shines a pale straw yellow with greenish highlights, reflecting its freshness and youth. The nose is expressive and finely etched, with aromas of white peach, green apple, and ripe citrus layered over fennel, wild herbs, and a subtle mineral edge, hinting at chalk and wet stone. Production
Quintaluna is sourced from high-altitude vineyards in Castilla y León, including parcels with very old, often ungrafted Verdejo vines rooted in sandy, stony soils overlying clay and limestone. This poor, well-drained terroir, combined with marked diurnal temperature swings, preserves acidity while concentrating flavor and aromatic complexity. Grapes are harvested by hand to ensure careful selection in the vineyard, typically in the cool of the early morning to protect freshness. In the cellar, Ossian ferments the must primarily in temperature-controlled stainless-steel tanks, with a portion possibly seeing larger wooden vessels, and then ages the wine on its fine lees for several months. Gentle bâtonnage adds texture without overwhelming the wine’s natural tension, resulting in a refined, mineral-driven Verdejo that focuses on purity rather than heavy oak influence.

This 2023 Verdejo is a versatile table partner, excelling with fresh seafood such as oysters, clams, grilled prawns, and simply prepared white fish, as well as sushi and ceviche.
