Grapes are harvested by hand to ensure careful selection in the vineyard, then gently pressed to obtain pure, clean juice. Fermentation takes place in temperature-controlled conditions, often in a mix of stainless steel and older Burgundian barrels, allowing the wine to develop texture and nuance without heavy oak imprint. Aging on fine lees adds depth and a touch of creaminess, while maintaining the hallmark precision and tension that define Sauzet’s whites.
