Tasting Notes
In the glass, the wine shows a pale to medium straw-yellow hue with subtle green reflections, hinting at both freshness and concentration. The nose is immediately inviting, with aromas of ripe pear, yellow apple and quince layered over white pepper, crushed herbs, fennel seed and a fine, stony minerality. Delicate hints of citrus zest, chamomile and a touch of smoke add complexity as it opens. On the palate, the 2022 Rosenberg is precise yet generous, with a silky texture supported by vibrant acidity. Flavors of juicy pear, Golden Delicious apple and lime peel intertwine with notes of white pepper, wet stone, and a very gentle nuttiness. The mid-palate is expansive but never heavy, finishing long and clean with a salty-mineral snap and a subtle herbal lift. While already beautifully approachable in its youth, this Grüner Veltliner has the structure and balance to evolve for 8–12 years, gaining more creaminess, spice and tertiary complexity with time in bottle.

Production
Ried Rosenberg is a southeast- to south-facing site in Kamptal, characterized by deep loess soils with good water retention overlaying primary rock, giving the wines both generosity and a finely etched mineral backbone. Bernhard Ott farms organically (BIO) with biodynamic principles, focusing on soil health and low yields to reflect the character of the vineyard as clearly as possible. Grapes are hand-harvested at optimal ripeness, carefully sorted, and gently pressed to preserve purity of fruit. Fermentation typically takes place with native yeasts in stainless steel or large neutral oak, followed by extended lees contact, which adds texture and complexity while maintaining the wine’s crystalline freshness and terroir-driven precision.

This Grüner Veltliner is exceptionally food-versatile, making it a natural fit for modern and classic cuisine alike. It pairs beautifully with freshwater fish, sushi and sashimi, shellfish, and delicately spiced Asian dishes, as well as classic Austrian fare like Wiener Schnitzel, grilled poultry, veal and seasonal vegetable dishes (especially asparagus, artichokes and root vegetables). Soft cheeses and semi-hard Alpine styles are also excellent matches. Serve well-chilled but not icy, ideally around 10–12°C, to allow the aromatics and texture to unfold.
