Tasting Notes
In the glass, the 2021 Vogelsang Kabinett shows a pale straw to light lemon color with bright, greenish reflections that hint at its youthful energy. The nose is lifted and detailed, offering pure aromas of lime zest, white peach, green apple, and nectarine, layered with notes of white flowers, wet slate, and a gentle hint of herbs and citrus blossom. On the palate, this is a quintessential Saar Kabinett: light-bodied, featherweight in texture yet intensely flavored. Production
Domane Serrig’s Vogelsang vineyard lies on steep, slate-rich slopes typical of the Saar, a cool subregion of the Mosel in western Germany. The combination of blue and gray slate soils, excellent drainage, and a cool climate with large diurnal temperature swings fosters slow, even ripening and exceptional aromatic intensity. Grapes for the Kabinett are harvested by hand, often in multiple passes (selective picking) to ensure optimal ripeness and pristine fruit. In the cellar, the Riesling is gently pressed, followed by a cool, controlled fermentation—typically in stainless steel—to preserve purity, freshness, and terroir expression. Fermentation is stopped at the ideal point to retain a delicate natural residual sweetness, resulting in a wine that is low in alcohol, vibrant, and finely balanced, without the use of heavy oak or intrusive winemaking techniques.

This Kabinett is superbly versatile at the table. Its vibrant acidity and touch of sweetness make it a natural partner for spicy Asian cuisine—think Thai dishes, lightly spiced curries, or Vietnamese salads—as well as sushi, sashimi, and dishes featuring shellfish, particularly prawns, scallops, and crab. It also pairs beautifully with light poultry dishes, soft cheeses, and fresh goat cheese, or simply as an aperitif. Serve well-chilled, ideally around 7–10°C (45–50°F), to highlight its precision and freshness. Decanting is not necessary, but opening the bottle 15–20 minutes before serving allows the aromatics to fully unfold.
