Tasting Notes
In the glass, this Meursault shows a bright golden-yellow hue with subtle green reflections, signalling both ripeness and freshness. The nose is complex and inviting, opening with notes of citrus zest and fresh lemon, followed by acacia blossom, wild honey and white flowers. Subtle hints of white pepper and a delicate, chalky minerality add lift and definition. On the palate, the first impression is powerful and concentrated, yet beautifully balanced. A core of ripe citrus and stone fruit is wrapped in a creamy, textural mid-palate, framed by vibrant acidity and a precise, saline minerality. The oak is finely judged, supporting the wine with gentle spice and structure without overshadowing the terroir. The finish is long, energetic and focused, with a lingering interplay of fruit, floral notes and stone. This 2020 Les Poruzots has the structure and concentration to age gracefully for 8–12 years from vintage, developing more honeyed, nutty and tertiary nuances with time in bottle.
Production
Les Poruzots is a renowned Premier Cru site in Meursault, characterised by clay and limestone-rich soils that naturally give wines of power, depth and pronounced minerality. Henri Boillot farms his parcels with a strong focus on sustainability and low intervention, allowing the vines to express the character of the site. Grapes are harvested by hand at optimal ripeness to preserve freshness and aromatic precision, then gently pressed and fermented using predominantly natural yeasts. The wine is aged for about 12 months in French oak, with approximately 50% new barrels and the balance in one-year-old barriques, providing fine structure and complexity while keeping the purity of fruit and the signature Poruzots minerality at the forefront.
Food & Serving
This is a serious gastronomic white Burgundy, ideal with rich, refined dishes. It pairs beautifully with butter-poached lobster, seared scallops, turbot or sole in beurre blanc, creamy poultry dishes such as poulet aux morilles, and veal or pork with light cream sauces. It also works wonderfully with roasted cauliflower, truffle-inflected dishes and aged, hard cheeses like Comté. Serve at 10–12°C (50–54°F) to allow the aromatics to fully open without losing tension. Young bottles will benefit from 30–45 minutes in a decanter, especially in the first few years, to reveal the full complexity of the fruit and the underlying mineral structure.

Domaine Henri Boillot traces its roots to the late 19th century, when Henri Boillot Sr. began acquiring prime vineyard holdings in some of Burgundy’s most prestigious appellations. Over successive generations—Henri Jr., then Henri Boillot III—the family steadily expanded and refined the estate, building a reputation for meticulous viticulture and precise, terroir-driven winemaking. Today, the domaine farms around 19 hectares across the Côte de Beaune, with a portfolio focused on Chardonnay and Pinot Noir from top Premier and Grand Cru sites such as Meursault, Puligny-Montrachet, Bâtard-Montrachet and Le Montrachet. Henri Boillot is particularly esteemed for his white wines, which are crafted using a philosophy of minimal intervention, natural yeasts and judicious use of new oak to let each vineyard’s character shine.
