Production
The fruit for this cuvée comes from Catena’s top high‑altitude sites in Mendoza, with a key role played by the famed Adrianna Vineyard in Gualtallary at around 1,480 metres above sea level. Here, cool nights, intense sunlight and poor, rocky soils rich in limestone produce small, concentrated berries and naturally low yields. The grapes – mainly Cabernet Sauvignon with Malbec and Petit Verdot – are meticulously hand‑harvested in small boxes to protect the fruit. In the winery, the lots are vinified separately with precise temperature control and gentle extraction to preserve finesse, followed by 24 months of maturation in French oak. The wine then spends a further 24 months aging in bottle at the bodega before release, allowing the components to knit together into a seamless whole.
Food & Serving
This is a serious, gastronomic wine that shines alongside richly flavoured dishes. Think dry‑aged ribeye or entrecôte, slow‑braised short ribs, lamb shoulder with rosemary, or game such as venison in a red wine reduction.
