In the glass, the 2018 Magill Estate Shiraz shows a deep, inky crimson core with a vibrant, purple rim that hints at its youth and concentration. The nose is immediately expressive: layers of ripe blackberry, black cherry and plum are wrapped in notes of cedar, vanilla bean and baking spices from 100% new oak, supported by hints of cocoa, licorice, dried herbs and a subtle smoky, charcuterie edge. On the palate, this is full‑bodied and richly textured, yet finely judged. Plush dark berry and blackcurrant flavours are framed by firm but ripe tannins and lively acidity, giving structure and focus. The new oak (70% French, 30% American) is evident in nuances of toasted coconut, mocha, clove and sweet spice, but it’s harmoniously integrated, adding depth rather than dominating. The finish is long, persistent and savory‑spicy, with lingering notes of dark chocolate and espresso. Magill Estate is Penfolds’ spiritual home, a historic vineyard set on the slopes just outside Adelaide, where the combination of warm South Australian sunshine, cooling evening breezes and well‑drained soils yields intensely flavored Shiraz berries. Grapes are typically hand‑harvested from low‑yielding vines to ensure optimal ripeness and careful selection in the vineyard. In the winery, the fruit is destemmed and fermented in small batches to preserve site character and concentration, with gentle extraction to build structure without harshness. The wine is then matured in 100% new oak (approximately 70% French and 30% American), where it develops its signature cedar, vanilla and spice notes while retaining the purity of Magill Estate fruit before being bottled with minimal fining to maintain depth and character.

This powerful yet polished Shiraz pairs beautifully with richly flavored, savory dishes: think grilled or roasted lamb, dry‑rubbed ribeye steak, slow‑braised short ribs, game meats, or aged hard cheeses like mature cheddar or Manchego. It also works well alongside dishes with a smoky char from the grill or oven, and hearty braises with rosemary, thyme and black pepper. Serve at around 16–18°C to show its full aromatic range. Decanting for 1–2 hours before serving is strongly recommended, especially in its youth, to soften the tannins and allow the oak and fruit to fully harmonize.
