Weingut Ziereisen’s Grauer Burgunder MUS is everything most people don’t expect from Pinot Gris: dry, structured and full of character, with none of the heaviness or blandness the variety is often known for. Sourced from old vines in Baden and crafted with a patient, low‑intervention approach, this white wine shows just how serious Grauburgunder can be. It follows a philosophy already evident in earlier vintages: texture, depth and authenticity over simplicity and speed.

Tasting Notes
In the glass, the Grauer Burgunder MUS typically shows a pale to medium straw colour with subtle coppery or golden highlights, hinting at skin contact and maturity on the lees. The wine is clear yet textural, with a lightly unfiltered look that signals its artisanal style. On the nose, expect layers of ripe pear, yellow apple and quince, joined by notes of almond, hay, brioche and a gentle smokiness from large, seasoned oak. Hints of citrus zest, dried herbs and a touch of stone dust or wet chalk give aromatic lift and precision. The palate is dry and firmly structured, with a savoury backbone that keeps the natural richness of Grauburgunder in perfect check. Ripe orchard fruits, roasted nuts and a subtle spice mingle with a fine, almost salty minerality, supported by fresh yet rounded acidity and a pleasantly phenolic grip on the finish. This is not a simple sipping Pinot Gris; it has weight, length and real gastronomic appeal. Enjoyable now for its energy and texture, it has the substance and structure to evolve gracefully over the next 4–6 years, gaining complexity and softer edges with bottle age.

Production
Baden’s warm, sun‑exposed vineyards and limestone‑rich soils give Ziereisen’s Grauer Burgunder MUS both ripeness and a distinctly mineral profile. The Grauburgunder vines behind this cuvée were planted as far back as the 1970s, providing naturally low yields and concentrated fruit. Harvest is carried out by hand to ensure only healthy, fully ripe grapes are selected. In the cellar, the must is given time on the skins before a slow, gentle pressing, allowing extra texture and aromatic depth without heaviness. Fermentation proceeds spontaneously with native yeasts, and the wine is aged in large, used wooden casks rather than new barrique, preserving purity while adding subtle roundness and complexity. The result is a thoughtfully crafted, minimally manipulated expression of Baden Pinot Gris.

Food & Serving
This is a food‑loving white that shines with richer, savoury dishes. Pair it with roast chicken or guinea fowl, veal schnitzel, pork loin with herbs, or creamy mushroom dishes. It also works beautifully with roasted root vegetables, pumpkin, charcuterie, soft cheeses like Brie or Camembert, and lightly spiced, earthy vegetarian cuisine. Serve at 10–12°C: cool enough to keep its freshness, but not so cold that the texture and aromatics are muted. A short decant of 20–30 minutes in a medium‑sized white wine carafe can help the wine open up, softening any initial reduction and bringing out its nutty, spicy complexity.
