Weingut Wittmann Weißer Burgunder Bio 2023 is a beautifully crafted organic Pinot Blanc from the gently rolling hills around Westhofen in Rheinhessen. Sourced from biodynamically farmed vineyards and matured in traditional large wooden casks, it shows a depth and character that go far beyond what you might expect at estate (Gutswein) level. This is a white Burgundy variety with real personality, echoing some of the edges and contours more often associated with its cousin, Grauburgunder.

Tasting Notes
In the glass, this Weißer Burgunder presents a bright, pale straw color with subtle greenish reflections, signalling its youthful freshness. The nose is layered and expressive, driven by yellow stone fruits in all their shades – from juicy, ripe yellow plum and mirabelle to slightly firmer, just-under-ripe notes – supported by hints of citrus zest and a touch of exotic passion fruit. A fine, herbal-spicy nuance weaves through the aromatics, adding grip and preventing the wine from feeling too straightforward or simple. On the palate, a lively, zesty acidity delivers immediate freshness, carrying the fruit effortlessly across the tongue. The texture is a key pleasure point here: silky to almost creamy, coating the mouth without ever feeling heavy. A distinct chalky, limestone-driven minerality cuts through the mid-palate, lending structure, lift, and a refined, mouthwatering finish. This 2023 has the concentration and balance to drink beautifully now but also to develop more complexity over the next 2–4 years, gaining further roundness and nuance with short-term cellaring.

Production
The fruit for Wittmann’s Weißer Burgunder Bio 2023 comes from biodynamically cultivated vineyards in and around the village of Westhofen in Rheinhessen, an area marked by limestone-rich soils and a relatively mild, dry climate. These limestone and loess-limestone soils lend the wine its characteristic chalky minerality and tension, while the biodynamic approach promotes healthy, balanced vines and naturally low yields. Grapes are harvested carefully—typically by hand—to ensure optimal ripeness and gentle handling. In the cellar, Wittmann relies on a restrained, traditional vinification: the grapes are processed softly, the must is allowed to clarify naturally, and fermentation and maturation take place in large, neutral wooden casks. This approach preserves the clarity of fruit and terroir while adding a subtle textural creaminess and harmony.

Food & Serving
This Pinot Blanc is a versatile food partner that shines alongside delicately prepared dishes. It pairs exceptionally well with roasted or grilled white fish, citrus-herb marinated chicken, veal in light cream sauces, and fine vegetable dishes such as asparagus, fennel, or leek tarts. It also works beautifully with mild goat’s and cow’s milk cheeses and lighter pasta with seafood or spring vegetables. Serve at 8–10 °C to accentuate its freshness and aromatic detail. Decanting is not essential, but pouring it into a larger-bowled white wine glass and giving it a few minutes in the glass will help open up the layered fruit and spice notes.
