Sourced from limestone-rich parcels within Westhofen’s esteemed VDP.Erste Lage vineyards, this organic Riesling delivers a precision and complexity you’d usually expect from a higher tier. Youthful and tightly wound for now, it’s a wine that reveals its pedigree with every swirl and sip.

Tasting Notes
In the glass, this Riesling shows a pale lemon colour with green reflections that underline its youth and freshness. The nose is initially restrained and elegant, offering fine aromas of yellow stone fruits and subtle exotic nuances, backed by delicate floral notes and a hint of flinty smokiness. That signature Wittmann spice quietly emerges with air, adding a savoury dimension to the fruit. On the palate, it is strikingly slender, dry and precise, yet perfectly balanced and harmonious. Bright citrus notes and juicy yellow fruit are interwoven with a light touch of sweetness, lifted by vibrant, mouth-watering acidity. The limestone-driven minerality comes through as a chalky, almost salty impression on the finish, giving the wine a long, linear and highly refreshing aftertaste. While already enjoyable, its structure and tension suggest very good aging potential over the next 5–8 years, during which it will gain additional complexity and textural finesse.

Production
The grapes for Riesling vom Kalkstein Bio are sourced from limestone-dominated sites around Westhofen in Rheinhessen, including parcels within recognised VDP.Erste Lage vineyards. This terroir, with its cool, calcareous soils and favourable microclimate, lends the wine its signature tension, salinity and stony minerality. As a certified organic estate, Weingut Wittmann employs careful, low-intervention viticulture, focusing on healthy, ripe fruit picked by hand to ensure optimal selection. In the cellar, the Riesling is vinified with a gentle, minimalist approach—often involving slow, temperature-controlled fermentation and extended time on fine lees—preserving purity of fruit, clarity of terroir, and a precise, finely etched structure.

Food & Serving
This Riesling is a versatile food partner, pairing beautifully with delicate seafood (such as ceviche, grilled prawns or steamed mussels), sushi and sashimi, as well as light poultry dishes and vegetable-based cuisine like asparagus, fresh goat cheese salads or herb-driven dishes. Its bright acidity and mineral backbone also make it an excellent match for mildly spicy Asian dishes and fine charcuterie. Serve well-chilled at around 8–10°C to highlight its freshness and precision. A short decant of 20–30 minutes, or simply giving it time in the glass, will help the wine open up and reveal more of its floral, spicy and mineral nuances.

Wittmann Riesling vom Kalkstein 2024 is an exceptional white wine, with an elegant mineral and almost saline flavor as well as texture in the wine. On the nose, you can also detect a discreet and slightly sweet note of fresh honeydew melon, yellow apples, and pears, along with a fresh acidity of citrus and green apples on the palate. A wine that is perfect for the Danish summer and could be a perfect match for ceviche.
