Weingut Rings Kalk & Stein Bio 2021 is a characterful, barrel‑fermented white from Germany’s Pfalz region, crafted from predominantly Chardonnay with a supporting share of Weißburgunder (Pinot Blanc). Grown on pure limestone and stone‑rich soils, this cuvée combines Burgundian depth with a distinctly cool, mineral backbone. Certified organic and bottled unfiltered with minimal sulphur, it’s a wine for those who appreciate precision, texture and authenticity in the glass.

Tasting Notes
In the glass, Kalk & Stein 2021 presents a pale to medium straw‑yellow hue with a subtle, glossy viscosity that hints at its time in oak. The nose is immediately expressive and slightly wild at first, showing a touch of “mosty” ferment character, clearly framed by a measured, well‑integrated wood influence. As it opens, the wine reveals a chalky, stony austerity at the core, layered with citrus peel, ripe pear and a fine exotic nuance reminiscent of passion fruit and yellow stone fruit, backed by hints of brioche, crushed shells and a faint smokiness. On the palate, the wine is dry, yet the initial impression is almost slightly sweet due to the gentle, creamy melt of Chardonnay and the textural richness from long lees contact. This impression shifts quickly as the wine tightens on the mid‑palate, where herbaceous, spicy and distinctly mineral notes take over: think grapefruit zest, white pepper, salted almond and cool wet stone. The structure is firm and zesty, with a vibrant acidity that cuts through the richness, giving the wine both grip and length. The finish is persistent, saline and energetic, with the limestone-driven minerality lingering long after each sip. Thanks to its concentration, acidity and careful élevage, Kalk & Stein 2021 has very good aging potential; it should develop additional complexity, creaminess and tertiary notes over the next 5–8 years, possibly longer under good cellaring conditions.

Production
The grapes for Kalk & Stein Bio 2021 come from limestone‑rich sites in the northern Pfalz, where chalky, stone-laden soils and a relatively cool, dry climate give the wines their tension and mineral clarity. Chardonnay makes up around 85% of the blend, supported by Weißburgunder, both varieties harvested by hand at optimal ripeness to preserve freshness and aromatic nuance. Fermentation took place spontaneously with native yeasts in large wooden casks, a slower, more gentle process that builds texture and complexity while maintaining purity of fruit. The wine then remained for about 18 months in these large oak vessels on its lees, gaining structure, depth and a subtle toast and spice character, without overt oak dominance. It was bottled unfiltered, with only minimal sulphur addition, in keeping with the estate’s organic philosophy and focus on expressing terroir as transparently as possible.

Food & Serving
Kalk & Stein Bio 2021 is a versatile gastronomic white that shines alongside refined, savory dishes. It pairs beautifully with roasted or grilled fish (such as turbot, cod or sea bass), shellfish, and seafood risotto, as well as roasted poultry, veal in light cream sauces, or pork with herbs. Rich vegetable dishes like truffled pasta, wild mushroom ragout, or roasted cauliflower with nutty accents also suit its mineral drive and textural depth. Serve at 10–12 °C to highlight its precision and freshness; slightly warmer temperatures will bring out more of the creamy, Burgundian side. A short decant of 30–45 minutes is recommended for maximum aromatic expression, especially in the first few years after release.

Weingut Rings is a dynamic family estate based in Freinsheim in the Pfalz, run by brothers Steffen and Andreas Rings, who have transformed the winery into one of the region’s most exciting modern producers. Originally a mixed farm, the family gradually shifted its focus fully to viticulture, steadily expanding and refining their vineyard holdings on some of the best limestone, sandstone and loess sites in the northern Pfalz. Today Rings is widely respected for its precise, terroir‑driven wines, from powerful yet elegant Rieslings and Burgundian‑styled Pinot Noirs to characterful cuvées like Kalk & Stein. The estate farms organically, has moved increasingly towards low‑intervention cellar work, and has earned a strong reputation in Germany and abroad, with high ratings from leading wine critics and inclusion among the top estates of the region.
