Crafted by Weingut Ökonomierat Rebholz, a benchmark estate for dry Riesling, this cuvée offers a remarkably pure and expressive taste of its unique terroir.

Tasting Notes
In the glass, the 2022 Birkweiler Riesling vom Rotliegenden shows a pale to medium lemon-yellow hue with brilliant clarity and a faint greenish shimmer at the rim, hinting at its youthful freshness. The nose is immediately striking: crystal-clear aromas of lime zest, green apple and white peach intertwine with notes of crushed slate, wet stone and a subtle herbal lift—think lemon balm and a whisper of wild fennel. On the palate, the wine is dry, precise and finely etched, with a lively, linear acidity that carries the fruit in a straight line across the tongue. Citrus and stone-fruit flavors—lime, grapefruit, and just-ripe nectarine—are wrapped in a pronounced, salty minerality from the red slate soils, giving the wine both tension and depth. The texture is sleek rather than opulent, with a long, focused finish marked by citrus peel and cool stone. Enjoyable now for its clarity and energy, it also has the backbone to develop further complexity over the next 5–8 years, gaining more texture and subtle smoky, honeyed nuances with careful cellaring.

Production
The grapes for this wine come from younger vines in the lower, more bowl-shaped parcels of Birkweiler, within the renowned Kastanienbusch site, where red clay slate (‘Rotliegendes’) dominates the soils. This warm yet well-ventilated corner of the southern Pfalz allows Riesling to ripen fully while retaining excellent acidity, with the red slate adding an unmistakable mineral imprint. The organically farmed grapes are harvested healthy and ripe, then carefully destemmed and lightly crushed. The must is left on the skins for around 24 hours, allowing gentle extraction of aroma and structure, before pressing. Fermentation and maturation take place in stainless steel tanks, in a deliberately reductive environment after an initial phase of controlled oxidation in the must stage—a hallmark of Rebholz’s style, aimed at preserving purity, tension and the clear expression of site.

Food & Serving
This Birkweiler Riesling vom Rotliegenden shines at the table with dishes that match its freshness and mineral intensity. It pairs beautifully with seafood—such as grilled prawns, steamed mussels or seared scallops—along with sushi, ceviche or lightly spiced Asian cuisine (think lemongrass, ginger and coriander rather than heavy chili heat). It also works well with goats’ cheese, fresh salads with citrus dressings, and simple dishes of white asparagus or seasonal vegetables. Serve well chilled, ideally at 8–10°C, to highlight its precision and aromatic lift. Decanting is not essential, but a short time in a larger glass or a brief, 15–20 minute aeration before serving can help the wine open up and reveal additional layers of minerality and fruit.
