Pi No. Rosé X Extra Brut from Weingut Ökonomierat Rebholz is a finely crafted German sparkling wine that bridges Burgundian elegance and Champagne-inspired precision. Now in its tenth edition—hence the “X” in the name rather than a vintage declaration—it showcases the estate’s meticulous approach to Pinot Noir in sparkling form. This is a serious, gastronomic rosé Sekt that offers both immediate pleasure and the structure to reward a bit of patience in the cellar.

Tasting Notes
In the glass, Pi No. Rosé X shows a very pale, delicate salmon hue with onion-skin reflections and a fine, persistent mousse. The color comes from a small addition of Pinot Noir still wine, resulting in a subtle, almost ethereal rosé rather than a deeply colored style. The nose is refined and quietly complex: gentle red berry notes—think wild strawberries, redcurrants and a touch of raspberry—are wrapped in aromas of brioche, toasted hazelnut and fresh pastry. A distinct chalky, marine-like minerality evokes freshly opened oysters and wet stone. On the palate, the wine is taut, dry and linear, in true Extra Brut fashion, with a very bright and precise acidity. The berry fruit remains delicate and pure, supported by nuances of citrus zest, almond and a fine, yeasty spice from the barrel aging and extended lees contact. The finish is long, saline and mouthwatering, making each sip feel incredibly lift­ing and drink-inviting. Thanks to its structure, balanced acidity and low dosage, this Sekt has very good aging potential over the next 3–6 years, during which it will gain even more brioche, nutty and savory complexity.

Production
The Spätburgunder grapes for Pi No. Rosé X come from limestone-rich (Muschelkalk) soils in the Pfalz, a terroir known for giving wines precision, tension and a distinctive mineral backbone. The fruit is harvested by hand at carefully judged ripeness to preserve freshness and aromatic clarity. For the base wine—a Blanc de Noir from the 2019 harvest—whole bunches are gently pressed, and only the first, most delicate press fraction (the “cuvée”) is used. This juice is then fermented and matured in used barrique barrels, adding subtle texture and complexity without overt oak flavor. Before the second fermentation in bottle, a small amount of Pinot Noir red wine is blended in to achieve the pale rosé color, a technique commonly used in Champagne. The wine then undergoes traditional bottle fermentation (méthode traditionnelle) and extended aging on the lees before disgorgement, resulting in its fine bubbles, refined autolytic notes and Extra Brut profile.

Food & Serving
This is a versatile, gastronomic sparkling rosé that shines with delicate yet flavorful dishes. Ideal partners include oysters and other raw or lightly cooked shellfish, sashimi, ceviche, and elegant seafood starters. It also pairs beautifully with charcuterie, smoked salmon, trout tartare, poultry terrines, and fine vegetable dishes such as beet carpaccio or asparagus with hollandaise. Light, subtly spiced Asian cuisine and soft-rind cheeses (such as brie or camembert) are also excellent matches. Serve well-chilled at 8–10°C, ideally in a white wine or tulip-shaped sparkling glass to allow the aromas to open. A brief 10–15 minutes in the glass acts like a gentle decanting, helping the brioche, red fruit and mineral tones to fully reveal themselves; no formal decanting is recommended for this traditional-method sparkling wine.
