Tasting Notes
In the glass, Cuvée X 2020 shows an intense, opaque deep ruby to almost black core with a narrow purple rim, hinting at its youth and extract. The nose is layered and evolving: aromas of ripe black cherry, sour cherry, cranberry and redcurrant mingle with notes of green bell pepper, cassis and cherry pit. With air, more savoury nuances emerge—smoke from a cold fireplace, beechwood, smoked bacon and leather—joined by hints of eucalyptus, dark chocolate and polished wood. On the palate, the wine is full-bodied, firm and tightly knit, with youthful, grippy tannins and a confident alcohol backbone that speaks to its power. Dark berry fruit, sour cherry and red currant are framed by spice, graphite, cedar and subtle tobacco. The finish is long, with lingering notes of dark chocolate, dried herbs and a touch of smokiness. At this stage, the individual components are still coming together; the structure slightly leads the fruit, promising significant improvement with time. Properly cellared, Cuvée X 2020 has excellent aging potential and can easily develop over 10–15 years, gaining harmony, finesse and tertiary complexity.

Production
Cuvée X is sourced from Knipser’s top vineyard parcels in the Pfalz, an area blessed with a relatively warm, dry climate and diverse soils ranging from loess and limestone to gravelly, well-drained sites ideally suited to Bordeaux varieties. The grapes—Cabernet Franc, Cabernet Sauvignon and Merlot—are typically harvested by hand at optimal ripeness, allowing for strict selection in the vineyard and at the sorting table. After destemming and a controlled fermentation on the skins, the young wine is aged in small oak barrels (with a significant proportion of new French barriques) to build structure, integrate tannins and develop its signature smoky, spicy complexity. The final blend is crafted only after extended maturation, with Knipser opting to release Cuvée X when it begins to show its potential, while still clearly built for long-term aging.

Food & Serving
This is a serious, structured red that shines alongside rich, flavourful dishes: think dry-aged ribeye steak, braised beef cheeks, venison, lamb shanks or slow-cooked short ribs. It also pairs beautifully with game birds, grilled mushrooms, truffle-inflected dishes and mature hard cheeses such as Comté or aged Gouda. Serve at 16–18°C to keep the alcohol in balance and highlight the aromatic complexity. Decant generously—at least 1–2 hours for young bottles like the 2020—to soften the tannins and allow the wine’s smoky, savoury and herbal notes to fully unfurl.
