Crafted from meticulously selected Chardonnay parcels, it combines ripe fruit, fine oak and a salty minerality in a refined, food‑friendly profile. This cuvée reflects Knipser’s long-standing commitment to making world‑class, burgundian wines on German soil and showcases just how sophisticated Pfalz Chardonnay can be.

Tasting Notes
In the glass, this Chardonnay shows a bright straw-yellow hue with subtle golden reflections, hinting at both ripeness and careful oak maturation. The nose is generous yet precise: acacia honey, honeydew melon and preserved pear unfold first, followed by notes of brittle, salted caramel and a suggestion of crème brûlée, all lifted by a fine, stony freshness. On the palate, the wine is remarkably silky, with a very soft, almost creamy mouthfeel that never tips into heaviness. The oak is perfectly integrated, adding structure and gentle toast rather than overt woodiness. Juicy stone and orchard fruit are wrapped around a vibrant, saline minerality that keeps everything in perfect balance. This is not a “fat” Chardonnay but a cool, elegant interpretation with a long, refined finish. Production
The grapes for Weingut Knipser Chardonnay *** 2021 come from carefully chosen vineyards in the Pfalz, where warm, sunny days and cool nights, combined with limestone- and loess-rich soils, provide an ideal setting for Burgundy varieties. Yields are deliberately kept low, and harvesting is done selectively, often by hand, to ensure only perfectly ripe and healthy fruit reaches the cellar. After gentle pressing, the must is typically fermented in small oak barrels, where the wine also matures on its lees, allowing for natural clarification, enhanced texture and a subtle integration of oak aromas. This patient, artisanal approach is key to achieving the wine’s balance of richness, freshness and mineral-driven finesse.

Food & Serving
This Chardonnay is a superb partner at the table, excelling with refined dishes rather than overpowering them. Pair it with roasted poultry, veal in cream sauces, grilled monkfish or turbot, or classics like scallops, lobster or buttery sole. It also works beautifully with mushroom risotto, truffled pasta, and semi-hard cheeses such as Comté or aged Gouda. Serve at 10–12 °C to highlight its freshness while allowing the aromatics and texture to unfold. A brief decant of 20–30 minutes can help the wine to open up its more subtle honeyed and nutty notes, especially in its youth.

Another big and bold chardonnay worth saving. I served it last week blind to a very successful restaurateur and great wine enthusiast: His first thoughts were "chardo between Auxey-Duresses blanc, Saint Romain and Meursault." And I don't blame him at all. Germany's high-level wine production is still somehow disregarded, especially compared to Burgundy. But please do yourself a favor and give it a try.

You don’t always have to go to France for great Chardonnays. In Germany, we are experiencing a Burgundy miracle, and *** from Knipser is a great example! Excellent ageing in oak barrels gives the wine a lot of elegance.
