This stressful, mineral-rich environment naturally restricts yields and concentrates flavor, resulting in wines of notable intensity and tension. Grapes are typically harvested by hand to ensure careful selection and to protect the delicate berries, especially important for preserving purity and aromatic precision in Riesling. In the cellar, the must is gently pressed and fermented at controlled temperatures in stainless steel or neutral large-format vessels to capture the vineyard’s character rather than overlay it with oak. A period of maturation on fine lees enhances texture, structure, and complexity while retaining the wine’s focused, mineral-driven style.
