Tasting Notes

Production
The Cuvée No. 422 Rosé Brut Bio comes from organically farmed vineyards in the Pfalz, a sunny, relatively dry region in southwest Germany known for its diverse soils and favorable climate for high-quality sparkling wines. Eymann harvests the grapes by hand to ensure careful selection in the vineyard, focusing on healthy bunches with the right balance of ripeness and acidity. The base wines are spontaneously fermented with native yeasts and matured in large wooden casks, adding texture and subtle complexity without overwhelming oak flavor. For this rosé, the estate uses white base wines (primarily Chardonnay) that are blended with a smaller portion (around 10–20%) of red Pinot Noir base wine—a method allowed for sparkling but not still wines—giving the final cuvée its gentle color and fine red fruit nuances. The wine then undergoes traditional second fermentation in the bottle, followed by extended aging on the lees before disgorgement, which contributes to its fine mousse and delicate autolytic notes.
