Weingut Eymann Riesling Schlossberg Bio 2020 is a meticulously crafted organic Riesling from a tiny, steep vineyard parcel high above the Pfalz, near the historic Wachtenburg castle ruins. Born from old, painstakingly hand-tended vines and fermented spontaneously in large wooden casks, it delivers both depth and finesse. This micro‑cuvée combines the raw character of its rugged hillside origin with the precision and clarity that have made German Riesling world‑renowned.

Tasting Notes
In the glass, the Schlossberg Riesling shows a bright, pale lemon color with green reflections, hinting at its youthful energy and freshness. The nose opens gradually, at first a touch restrained, then revealing layers of spice and minerality: notes of crushed stone, cumin seed, and delicate, almost oriental herbs, followed by citrus zest, green apple, and a whisper of white flowers. On the palate, the wine is taut and vibrant, with a finely etched acidity that carries flavors of lime, grapefruit, crunchy pear, and green apple, underpinned by a saline, stony backbone. Subtle spice, herbal nuances, and a gentle, well-integrated touch of oak add complexity without weighing the wine down. The texture is precise yet supple, finishing long, dry and focused, with a lingering mineral note. Enjoy it now for its tension and aromatics, or cellar it for 5–8 years to allow the spice and earth tones to further knit with the fruit.

Production
The Schlossberg parcel sits on a steep, hard-to-reach slope above the village, characterized by poor, stony soils that naturally limit yields and concentrate flavor. Originally planted with old, ungrafted Kerner vines around 50 years ago, the site has been carefully top‑grafted to Riesling, preserving the deep, established root system while changing the variety – a labor‑intensive process carried out entirely by hand. Because the vineyard cannot be accessed by tractor, all cultivation, canopy work, and harvesting are done manually, resulting in extremely low production and meticulous grape selection. The fruit is harvested by hand at optimal ripeness, then allowed to ferment spontaneously with native yeasts in large traditional wooden casks, enhancing texture and complexity while maintaining purity of fruit. Extended time on the lees adds depth and balance, yielding a wine that clearly speaks of its singular hillside terroir.

Food & Serving
This Riesling’s combination of freshness, spice and minerality makes it a versatile partner at the table. It pairs beautifully with delicate, aromatic dishes such as ceviche, sashimi, or lightly grilled white fish with herbs, as well as poultry or veal in lemon or white wine sauces. The subtle spice notes also work well with modern Asian‑influenced cuisine, lightly spiced curries, and vegetable dishes featuring fennel, asparagus, or roasted root vegetables. Serve well chilled at around 8–10°C to highlight its tension and aromatics; a brief 20–30 minutes in a carafe can help the wine open up if served in its youth.
