Grapes are typically harvested by hand to ensure careful selection and intact fruit, a key point for quality-focused organic producers like Weingut Eymann. In the cellar, the wine is vinified with a gentle, minimalist approach, allowing wild or carefully managed yeasts to guide fermentation at controlled temperatures.
