This is a Chardonnay for drinkers who value finesse over flash, crafted with the same care usually reserved for top-tier Burgundy. The wine stands out for its combination of cool-climate freshness, subtle oak influence and a beautifully mineral-driven palate. It reflects a new chapter in German Chardonnay, where Burgundian know-how meets German terroir. Wasenhaus, founded by two winemakers who honed their craft in top Burgundy domaines, has quickly built a cult following for their nuanced, terroir-expressive wines.

Tasting Notes
In the glass, Wasenhaus Chardonnay 2023 typically shows a pale straw to light lemon hue with a faint greenish edge, signaling its youth and freshness. The nose opens with clean, lifted aromas of lemon zest, green apple and ripe pear, layered with white flowers, crushed limestone and a whisper of toasted hazelnut from sensitive oak aging. On the palate, this Chardonnay is precise and finely etched rather than opulent. Expect a crisp, linear structure with bright citrus, orchard fruit and a saline, mineral core that keeps everything taut and energetic. Subtle creaminess and gentle brioche or almond notes emerge with air, adding complexity without weighing the wine down. The finish is long, stony and mouthwatering, hinting at chalk and citrus pith. Production
The grapes for Wasenhaus Chardonnay 2023 come from carefully farmed, cool-climate vineyard sites in Württemberg, where limestone- and sandstone-influenced soils help deliver both tension and aromatic clarity. Yields are kept low to concentrate flavor, and the fruit is picked by hand at optimal ripeness to preserve natural acidity and avoid over-maturity. In the cellar, Wasenhaus follows a largely low-intervention, Burgundian-inspired approach: gentle whole-bunch or lightly crushed pressing, spontaneous fermentation with native yeasts, and élevage in mostly used, neutral oak barrels (with only a modest proportion of new wood, if any). The wine typically rests on its fine lees for added texture and complexity, with minimal fining or filtration and a restrained use of sulfur to keep the character of the vineyard front and center.

Food & Serving
This is a versatile gastronomic Chardonnay that shines with refined yet simply prepared dishes. Think grilled or pan-seared white fish, scallops, delicate shellfish, roast chicken with herbs, veal in light cream sauces, or fresh goat’s and soft cow’s milk cheeses. It also works beautifully with vegetable-based dishes such as asparagus with hollandaise, lemony risottos, or roasted root vegetables with herbs. Serve well-chilled but not icy, ideally around 10–12 °C (50–54 °F), to allow the aromatics and texture to unfold. A brief decant of 20–30 minutes, or simply opening the bottle a little ahead of serving, can help the wine open up and show its full range of nuance.

Wasenhaus is a small, highly regarded German estate founded by friends who trained in some of Burgundy’s top domaines before returning home to apply those lessons to German terroir. From the outset, their focus has been on meticulous vineyard work, organic-leaning practices and restrained, low-intervention winemaking that lets site and vintage speak clearly. Although still a relatively young name, Wasenhaus has quickly become one of the most exciting producers in Germany’s new wave, particularly admired for their Pinot Noir and Chardonnay. Their wines are now sought after by sommeliers and collectors across Europe and beyond, celebrated for their finesse, precision and unmistakable sense of place.
