Tasting Notes
In the glass, the 2023 Hautes-Côtes de Beaune Blanc is pale straw with green reflections, signaling its youth and vibrancy. The nose opens with pure aromas of ripe pear and white flowers, lifted by a subtle note of fresh mint that adds a cool, herbal brightness.
On the palate, the wine is medium to full-bodied yet wonderfully satin-like in texture, gliding across the tongue with a fine, crystalline precision. Harvesting is typically done by hand to ensure careful selection of healthy, ripe grapes from these recent plantings in 2019, 2020 and 2021. In the cellar, Vincent Dancer is known for a very gentle, low-intervention approach: soft pressing of whole clusters, natural fermentations, and élevage in a balanced regimen of mostly used oak to enhance texture without masking the clarity of fruit and terroir. The result is a wine that feels finely etched, textural and precise rather than overtly oaky.

This Burgundy white is a natural partner for simply prepared seafood, such as grilled or pan-seared white fish, scallops, or shrimp, as well as roast chicken with herbs, veal blanquette, and creamy yet delicately flavored dishes like mushroom fricassee or risotto with spring vegetables. It also shines alongside soft-rind cheeses such as Brie, Chaource or young goat’s cheese. Serve at 10–12°C (50–54°F) to highlight its freshness and floral lift; a brief 20–30 minutes in the fridge before serving is ideal.
