Tasting Notes
In the glass, the 2022 shows a pale straw to light gold hue with a brilliant, crystalline brightness—classic cool-climate Chardonnay. Sourced from cool, chalk-rich vineyards in the Champagne region of France, this Coteaux Champenois Blanc is all about expressing the subsoil that defines Champagne. The Chardonnay grapes are typically harvested by hand to allow careful selection of perfectly ripe, healthy bunches. In the cellar, the must is gently pressed and vinified as a still wine—often with a combination of stainless steel and neutral vessels—allowing a slow, controlled fermentation at cool temperatures to preserve aromatics. Extended time on fine lees adds texture and depth without masking the crystalline expression of fruit and terroir, resulting in a precise, terroir-driven still Chardonnay rather than a base wine for sparkling production.
Food & Serving
This wine is a natural match for refined, subtly flavored dishes: think oysters, scallop crudo, steamed mussels, sushi and sashimi, or simply grilled white fish with lemon and herbs. It also pairs beautifully with goat cheese, young Comté, or poultry in light cream or citrus-based sauces. Serve well-chilled but not icy, ideally around 9–11°C (48–52°F), to let the aromatics open. A quick 15–20 minutes in the fridge before serving is usually enough, and while decanting is not essential, a few minutes in the glass will allow the wine’s chalky complexity to unfold.
